What propane actually gives you
A gas smoker is an electric smoker that does not need a plug. That sentence is the entire pitch and it is a stronger one than it sounds, because the single most common reason a beginner cannot use the smoker they bought is that there is no outdoor outlet and a 50-foot extension cord across the lawn is not a plan. Propane removes that problem without removing the dial.
It also runs hotter than an electric element, which matters more than beginners expect. An electric cabinet capped at 275°F cooks a fine brisket and produces soft, unpleasant poultry skin. Gas gets to the top of USDA’s 225–300°F band without complaint. And a thermostatic gas model — there is one in the picks above — closes the last gap by regulating the burner itself, so it behaves like a set-and-forget cabinet for a whole cook.
The honest costs: you are watching a tank rather than a plug, and a tank that empties at hour nine of a brisket is a genuinely annoying way to learn to keep a spare. Wind affects a burner more than it affects an element. And the smoke, while real, is lighter than charcoal’s, because the heat is not coming from burning wood and charcoal in the first place.
What charcoal actually gives you
Better barbecue, and a hobby. Those are different things and both are worth paying for, but only one of them is a food argument.
The food argument is real: charcoal plus wood chunks produces a heavier, more complex smoke and tends to build a firmer bark than gas or electric does. A bullet smoker will hold 225–250°F for eight to twelve hours on one load of charcoal once you have learned its vents, which is more than enough for anything you are likely to cook. It is also cheaper to buy and, being a simple steel object with nothing electronic in it, it will very likely outlast you.
The hobby argument is the one people underestimate in both directions. Some buyers discover that managing a fire is the part they enjoy most and that the gas smoker they nearly bought would have bored them. Others discover that after a long week, the last thing they want is to chase a temperature for an hour before dinner starts cooking, and that the cooker consequently gets used twice a year. Be honest with yourself about which one you are, because it predicts your enjoyment better than any spec on this page.
Charcoal also brings a genuine safety chore that gas does not. NFPA’s disposal guidance is to douse the fire with water before going to sleep or leaving the area and make sure the area is cool to the touch, and to empty coals into a metal container with a tight-fitting lid used only for that purpose — never directly into a trash can. Gas has no equivalent step.
Running cost, honestly
Both are cheap to run relative to the food you put in them, and neither one wins by enough to decide a purchase. A tank of propane covers a lot of cooks; a bag of charcoal covers one long one. What is genuinely different is the shape of the spend: propane is a lump sum every couple of months, charcoal is a few dollars every time you cook, and which bag you buy changes that number more than most people realize.

The safety and weather notes that actually differ
- Wind hurts gas more. A burner sitting in a crosswind loses heat and can drop the cabinet below the safe band. USDA specifically advises shielding a smoker from wind to maintain a safe cooking temperature. Charcoal responds to wind by burning faster and hotter, which costs fuel rather than control.
- Cold hurts thin steel of either fuel. An insulated or double-walled body — gas or charcoal — matters far more in November than the fuel does. See smoking in cold weather.
- Neither is safe unattended by default. NFPA’s guidance is never to leave a grill unattended while it is in use, and nearly a quarter of grill structure fires started on an exterior balcony or open porch. - Ash is a charcoal-only job. Every cook, into a metal container with a lid. It takes two minutes and it is the step people skip.
Which should you buy?
Buy propane if: you have no outdoor outlet, you want to cook on a schedule rather than around a fire, you are nervous about your first cook, you plan to smoke a lot of chicken and turkey, or the smoker needs to travel to a campsite. The thermostatic model is worth the step up if the budget reaches it, because it removes the last thing you have to watch.
Buy charcoal if: the flavor is the reason you are doing this, you like the idea of learning something with your hands, you want the most cooker for the least money, or you want a thing you will still own in twenty years. A bullet is the right shape to learn on — start with ribs, which forgive everything, rather than with a brisket.
