That window is slow enough to render fat and build smoke flavor, but warm enough to finish in a reasonable number of hours. You do not need to nail an exact number. A smoker holding a steady 240°F will make better food than one frantically bouncing between 210°F and 280°F while you chase 225°F. Steady beats precise.

Why the temperature swings in the first place

The most common beginner mistake is panicking: the temperature climbs, you slam every vent shut, it crashes, you throw the vents wide open, it spikes, and now you are riding a rollercoaster of your own making. Come off the throttle gently. If the fire does get too hot, close the intakes part way — never all the way at once, or you can smother it entirely.

Controlling a pellet smoker

A pellet smoker flips the whole problem on its head, because a digital controller does the throttling for you. It feeds pellets and runs a fan to hold whatever temperature you dial in. Your job is mostly to let the controller work and stop fighting it.

Two things keep a pellet smoker steady. First, keep the hopper full — if it runs dry mid-cook, the fire goes out and you get a temperature crash plus a fussy restart. The golden rule: one change at a time
