Where you can put it — the decision that matters most
An electric smoker is only as convenient as your nearest outdoor socket. Running an indoor extension lead out through a window is not an acceptable answer for an appliance that draws 800 watts continuously for twelve hours in the weather. If you do not have a proper outdoor outlet within a short, outdoor-rated cord’s reach, propane is not a compromise — it is the correct choice.
Propane, conversely, goes anywhere outdoors: the far corner of a yard, a campsite, a tailgate, a rental where you cannot install anything. It also keeps working in a power cut, which is a small thing until it is not.
Both are outdoor appliances without exception. Neither belongs in a garage, on a covered balcony with poor airflow, or under a low overhang — the gas one for obvious combustion reasons, the electric one because a smoker is still producing smoke and heat that needs somewhere to go. Heat, and why chicken is the tiebreaker
A gas burner has far more power in reserve than a heating element. That shows up in three places. It reaches higher temperatures, so poultry skin can render and crisp rather than turning to leather. It recovers faster after you open the door, so a long cook is less disturbed by checking on things. And it copes with cold weather, where an electric element can end up running flat out just to hold 225°F on a January afternoon — see smoking in cold weather.
None of that matters for pork butt or ribs, which live happily at 225-250°F and do not need crisp skin. It matters enormously for chicken, turkey and wings. If you are buying one cabinet smoker and you intend to cook birds in it, buy the gas one. If you are cooking pork and beef, take the electric and enjoy the simpler setup.
The workaround on an electric is real but inconvenient: smoke the bird, then finish it for ten minutes in a hot oven or over a grill to crisp the skin. Our smoked chicken guide and wings guide both cover it.
Control, and what actually holds a temperature
Electric smokers have the edge here as a category, because a digital thermostat is standard equipment. You set 250°F, the element cycles, and the cabinet holds it. There is nothing to learn.
Most propane smokers use a manual needle valve instead: you set the flame roughly and the cabinet settles wherever it settles, then drifts a little as the weather changes. It is a two-nudges-per-cook job, not a burden. But a few gas models — the ThermoTemp on our propane picks page is the notable one — put a thermostatic valve in the gas line and hold the set temperature automatically. That model closes the control gap entirely, and it is the reason to consider gas even if you do have an outlet.
Whichever you buy, do not trust the built-in dial. Cabinet thermometers are frequently 20-30°F out and are mounted at the door rather than at grate level. A leave-in probe costs a fraction of the smoker and is the difference between cooking and guessing — see our thermometer picks.
Smoke, wood and running cost
Both use a small pan or tray of wood chips over the heat source, and both want chips rather than chunks — neither has the heat to work through a fist-sized piece. Expect to top the pan up every 45 to 90 minutes for the first three or four hours, which is when meat actually takes on smoke. See wood chips vs chunks.
Gas produces slightly more smoke in practice, simply because the pan sits over a hotter source and works the chips harder. It is a modest difference and not a reason to choose either way. Flavor-wise, both sit at the milder end of the spectrum; if you want a bolder smoke, that is an argument for charcoal or a drum smoker rather than for one of these over the other.
On cost, electric is the cheapest smoker type to run of any kind, and propane is close behind — both are far cheaper per cook than charcoal or an offset. The practical difference is the failure mode: a tank that empties at hour nine ruins a brisket, while an electric only stops if the power does. Keep a spare tank. So which should you buy?
Buy propane if there is no convenient outdoor outlet, you want to cook poultry with crisp skin, you smoke through cold winters, or you want a cooker you can take camping. Choose a thermostatic model if you want it to be as hands-off as an electric.
Buy electric if you have a proper outdoor outlet, you mostly cook pork and beef, you want the simplest possible first smoker, or you are smoking somewhere an open flame would be a problem. It remains our default recommendation for a first smoker on the main roundup for exactly that reason.
