That is not a hard rule — some cooks stall a little lower, some a little higher, and a few briskets seem to stall twice. It tends to show up a few hours into the cook, right about when a nervous beginner is already wondering whether dinner will ever be ready. Big, wet cuts with a lot of surface area — whole packer briskets and pork shoulders especially — stall the hardest and the longest.

What causes the stall: evaporative cooling

For years people blamed the stall on fat or collagen rendering, but the real culprit is much simpler: evaporative cooling. A raw brisket or pork shoulder is mostly water. As the meat heats up in the smoker, moisture is constantly evaporating off its surface, and evaporation pulls heat away — the exact same way sweat cools your skin on a hot day, or stepping out of a pool leaves you shivering. For a stretch of the cook, the meat sheds heat through evaporation just about as fast as the smoker pushes heat in. The result is a standoff, and the temperature simply stops rising. Once the surface finally starts to dry out and that evaporation slows down, the meat breaks through the stall and the temperature climbs again.

Why it panics beginners

The stall is stressful for one reason: it looks exactly like a problem. You have done everything right, the meat has been cooking for hours, and now the number that is supposed to keep going up has frozen. It is tempting to assume the fire is dying, the thermometer is broken, or the meat is somehow ruined. None of those are usually true. The two worst reactions — cranking the smoker way up to force the temperature, or panicking and pulling the meat early — both wreck the cook. Overcranking dries out and chars the bark and can leave you with a tough, rushed result; pulling early on a brisket or pork shoulder gives you a safe but stubbornly tough hunk of meat, because tough cuts only turn tender well above the stall, up around 200–205°F.

Say it out loud at the smoker if you have to: the stall is normal, and it will end. Every long cook of a big cut goes through it. It is not a malfunction, it is physics. Given enough time the surface dries, evaporation slows, and the internal temperature starts climbing again on its own — no intervention required. If you have the hours to spare and you are not on a tight schedule, doing absolutely nothing is a perfectly good plan. Your two options when the stall hits

When the stall arrives, you have two legitimate choices, and neither one is wrong:

  • Ride it out, unwrapped. Do nothing, keep the smoker steady, and wait for the meat to break the stall on its own. This gives you the firmest, darkest, most developed bark — the crusty, seasoned exterior a lot of people love — because the surface keeps drying in open smoke. The trade-off is time: riding out a stall unwrapped can add two or three hours to the cook, sometimes more.
  • Wrap it — the “Texas crutch.” Once you are happy with the color and bark, wrap the meat tightly in butcher paper or foil to trap moisture against the surface. That stops the evaporative cooling almost immediately, so the temperature climbs steadily again and you power through the stall far faster. The wrap also protects the bark from drying out too much and can save you a couple of hours on a long cook. This move is so common on brisket that it earned the nickname the Texas crutch.

Butcher paper or foil?

If you decide to wrap, the material you use changes the result:

  • Butcher paper (unwaxed, food-grade — often sold as “peach” paper) breathes a little. It still traps enough moisture to beat the stall, but it lets the bark stay firmer and closer to the unwrapped texture. It is the middle ground: faster than no wrap, with better bark than foil.
  • Aluminum foil seals completely. It is the fastest way through the stall because it traps the most moisture and steam, but that same trapped steam softens the bark — some people call a foil wrap the “Texas braise” for that reason. Foil is a great choice when speed matters more than a crackly crust, or on a cut like pork shoulder that gets pulled anyway.

For a first brisket where you want good bark and a predictable finish time, butcher paper is a sensible default. For pulled pork, foil is completely fine because you are shredding it regardless.

Plan for the stall so it stops being scary

The single best way to take the stress out of the stall is to expect it. Build it into your schedule from the start: assume any brisket or pork shoulder will stall for a couple of hours, and start the cook early enough that a long stall still leaves you plenty of buffer before dinner. A cut that finishes early is not a problem — a wrapped brisket or pork shoulder will happily hold, hot, in a dry cooler for two to four hours while it rests. Don’t crank the heat

It is worth repeating because it is the mistake everyone is tempted to make: do not crank the smoker up to blast through the stall. If you want to move faster, wrap the meat — that is the right tool for speeding up a stall. Keep the smoker in its steady low-and-slow range; per USDA guidance a smoker should sit between 225°F and 300°F. Let the wrap, not a roaring fire, do the work.

Which cuts actually stall

The stall is really a big-cut phenomenon. The classic offenders are brisket and pork shoulder — large, wet, collagen-heavy cuts that spend many hours on the smoker and have plenty of surface to evaporate from. Smaller and quicker cooks like chicken, ribs, or a pork tenderloin either stall very briefly or not in a way you would notice, because they finish before evaporative cooling can dig in. So if you are smoking a big brisket and the temperature parks itself for hours, that is expected. If a batch of wings does the same thing, check your fire — that is a different problem.
